Based on an Italian dish called Fragole all’aceto balsamico, this recipe uses a splash of balsamic vinegar and a drizzle of honey to draw out the sweet fruity goodness of fresh strawberries. Makes approximately 2 cups.
Cut small strawberries in half and larger strawberries into quarters. Place them in a large bowl.
Add honey, balsamic vinegar, and salt to the bowl and stir until the strawberries are well-coated.
Let strawberries rest at room temperature for 30 minutes, stirring for about 30-45 seconds every ten minutes or so to encourage the strawberries to release some of their juices.
When the strawberries are finished macerating, top them with freshly cracked pepper and/or fresh herbs like mint/basil if desired. Serve immediately and refrigerate any leftovers in an airtight container.
