Refreshing Watermelon Salad Recipe

Made with sweet watermelon, creamy feta, crispy cucumber, fresh mint and lime dressing, this refreshing salad is the perfect balance of sweet, salty and savory.

Ingredients

  • ¼ cup red onion, thinly sliced
  • 1 small seedless watermelon (enough to make 3 c. cubed)
  • ¾ cup English cucumber
  • ½ cup chopped fresh mint leaves
  • ¼ cup extra-virgin olive oil
  • 2 tbsp lime juice
  • 1 tsp honey
  • ¼ tsp sea salt
  • 5 oz block of feta cheese, crumbled (about 1 cup)

Instructions

  • Cut the onion into thin slices. Place the slices in a bowl of water while you prep the other ingredients. (About 10-15 minutes.)
  • Cube the watermelon and add it to a medium bowl.
  • Chop the cucumber and mint, then add them to the bowl with the watermelon.
  • Remove the onions from the water, pat them dry, and add them to the bowl.
  • Mix the olive oil, lime juice, honey and salt in a small bowl, then pour them over the watermelon mixture. Toss until well combined.
  • Now it's time to add the feta. If you add it and then toss everything it will look kind of messy, so I recommend dividing the salad into serving bowls while sprinkling a little throughout as you go. Make sure to reserve some to sprinkle over the top.
